Around this time of year, the bevy of Christmas parties and celebrations can mean that you’re asked to bring something to an event at short notice. This recipe for gluten free peanut butter cookies is so incredibly easy, and you’ll be surprised how well the texture works—it’s hard to believe when you’re eating them that they’re made with three simple ingredients and without any flour or carbs. Plus, since the main ingredient is peanut butter, these are packed with protein and natural fat which is a good way to slow down the absorption of carbs that tend to be everywhere this time of year.

This month I’ve posted quite a few dessert recipes in addition to this gluten free one, and while I normally advocate against sugar, I am doing this to provide alternatives at this treat-heavy time of year. Just because it’s Christmas doesn’t mean you have to give up totally on eating healthy and wheat/dairy free. There are plenty of alternatives out there where you can use sweeteners that aren’t toxic like sugar.

Ingredients:
-One cup peanut butter (crunch or smooth)
-Three table spoons xylitol (tastes and bakes just like sugar)
-1 large egg
-(optional) you can add shredded coconut or rolled oats to these to give them more texture.

Simply whisk ingredients together in a bowl and place on cookie sheet. Bake for about 10-12 minutes at gas mark 6, or until firm. Let cookies sit for 5 minutes or so after baking as the texture will change and they will firm up a bit.
